Enchiladas Cooking Class at Central Market in San Antonio

Cappy Lawton and Chris Waters Dunn, authors of Enchiladas: Aztec to Tex-Mex, will teach an Enchilada Dinner class at the San Antonio Central Market Cooking School that includes a demonstration of how to prepare interior Mexican enchiladas and complementary side dishes using basic techniques of the Mexican kitchen. The authors will also present a history of enchiladas from pre-Columbian to modern times, tracing the evolution of this iconic Mexican food both in Mexico and the United States.
